A crossover kombucha with Plants

During a trip in Kyoto, Japan, founders of Plants - Square and Lily - occasionally tried a cup of tea made with shell ginger fruits and are amazed by the elegant aroma of warming spices.
Shell ginger is a perennial species of ginger native to East Asia. It is commonly seen in Taiwan. Leaves of shell ginger are often used for wrapping Zong-Zi; Its fruits, however, are seldom used in traditional dish despite its unique aroma.
Plants and Yu Fermentory met each other in a farmer market. An idea of combining kombucha with shell ginger fruits thus occurred at that time.
We brew a tea base for main fermentation with wild harvested shell ginger fruits from Dulan (Taitung), Taiwanese green tea and black tea. When the fermentation is close to the end, we infuse the kombucha with shell ginger fruits again for another layer of aroma.

・Yu Fermentory Kombucha is unpastuerised and hence it is living.
It is suggested to keep it refrigerated at or below 4° C. (do not freeze) Expiration: no less than 45 days (keep refrigerated)
・Please do not shake it due to natural carbonation in the bottle.
・Yeast sediments, floaties or little jellies found in the bottle are naturally formed due to healthy fermentation. They are safe to be consumed.
・It is okay to gently swirl the bottle to mix the yeast sediments with kombucha tea for a more flavourful taste.
・When it comes to choosing a right glass for tasting, go for a smaller bowl and a narrower, more tapered mouth.
・Delicate bubbles are naturally formed due to fermentation. We do not do force carbonation.
